Terme de Saké

Liste officielle des termes techniques en Anglais liés au saké conformément au National Research Institute of Brewing (Sake Terms, version d’essai ver.3 – Sake Terms 試行版 ver.3). Cette liste est publiée en langue française en coopération avec Mr. GAUTIER ROUSSILE.
Indication) Cette liste a été établie en Anglais afin de faciliter la compréhension des termes liés au saké. Cela n’oblige en rien sa consultation ni l’exclusion d’autres termes.
Certains termes Anglais complémentaires sont indiqués entre parenthèses.
Vous pouvez remplacer un terme composant un autre terme (Exemple : 精米(riz blanc) et 精米歩合(degré de polissage du riz)) dans les définitions et les d’explication par un synonyme approprié.
Ces termes, recommandés par des personnes de nationalité étrangère concernées par le saké japonais, ont été publié en Anglais afin de faciliter leur compréhension auprès d’interloculeurs non-Japonais.

* Les règles du système de transcription Hepburn en roma-ji suivent la regle de transcription des passeports (Le son “n” étant écrit “M” avant un B, M ou P, etc.). Les mots composés de longues voyelles (kōji, jōzō, shuzō, etc.) pour lesquels la pronociation est incluse dans leur transcription ont été retranscrit selon cette règle à côté de l’écriture originale. Mais, les mots japonais venant de l’anglais (アルコール (Arukōru (Alcool))、ガス (Gazu (Gas)), etc.) ont été retranscrits en Anglais.

  日本酒度nihonshu-doNihonshu-do est un indicateur de douceur du saké. C’est une densité spécifique convertie en unité de mesure du saké indiquant sucré ou sec. + signifie sec, – signifie sucré.Nihonshu-do is an indicator of sweetness of sake.
It is a specific gravity converted into sake meter scale which indicates sweet or dry. + means dry and – means sweet.
